Supercooling

The term supercooling often appears in literature related to lyophilization or freeze-drying. For many it is often a very confusing term and even the simplest of definitions (see INSIGHT Vol. 2 no. 1) may be found to be inadequate. This INSIGHT will consider its measurement, shed some light on the phenomena itself and its impact on the properties of the final product. In doing so, I must point out that the subject is far more complex than what I will present here. But then, when you stop and think about it, what about this field of lyophilization or the freeze-drying process is not complex and so in spite of the fact that the general use of this technology is approaching its 100th birthday, I always tend to feel we are still at the threshold of its beginning and there is so much more for us to learn.
